Carbohydrates are the main source of energy and are generally classified as sugars, starches, cellulosis, and fibers.
Complex carbohydrates are starches. They're made up of longer chains of sugar molecules, which makes them take process of digesting longer. Since complex carbs are digested more slowly than simple carbohydrates, most sources do not raise blood sugars as quickly as simple carbohydrates. They can also be defined as "good" & "bad" carbs.
